Sometimes I could go for some comfort food, and these homemade toaster strudel are where it’s at!
Brown sugar Poptarts were my mom’s favorite breakfast as a kid, and they quickly became mine. Justin and I have both been having some serious withdrawals and have been craving some cinnamon toaster strudel in the midst of the chaos.
Poptarts come in a ridiculous amount of packaging. But breakfast toaster strudel is so easy to make at home and so much better for you! The homemade toaster strudel icing is truly the proverbial icing on the cake.

It starts out with my homemade pie crust. The recipe makes two 9″ pie crusts. I always make one and save the other one for later.
I used a leftover pie crust, and it made four toaster strudels. If you were to use the whole recipe, it would make 8-9 toaster strudels.

Filling
- 1/4 Cup of Brown Sugar
- 1 Tablespoon of Flour
- 1 Tablespoon of Cinnamon
Egg Wash
- 1 Tablespoon of Milk
- 1 Egg
Icing
- 6 Tablespoons of Powdered Sugar
- 1 Tablespoon of Milk
- 1 Tablespoon of Cinnamon

roll out dough
Preheat the oven to 350. Roll out the pie crust and cut into roughly eight 5″ x 7″ rectangles.
More flour on my shirt than my workspace…. I must be doing it right!
mix the egg wash
Make the egg wash by whisking the egg and milk together. Lay four of the pie crust squares on a greased cookie sheet, then brush with the egg wash.
Top Tip: If you’re making four toaster pastries, you will have a lot of the mixture left over. I used it for scrambled eggs. If you’re making nine pastries, double the milk but only use one egg.

Combine the filling ingredients in a bowl.
Place a heaped tablespoon of the mixture on the bottom halves and spread it within a 1/4 inch of the edge of the dough.
Take the other four crusts and place them on top. You’ll want to crimp it with a fork to keep the goodness inside. Poke holes on the top to let steam out.
Bake the toaster pastries in the preheated oven for 20 – 30 minutes.

During that time, you’ll want to make the toaster strudel icing.
Whisk the icing ingredients together in a bowl.
Once the strudels are done baking, wait at least 10 minutes for them to cool before adding the icing.

can I buy premade pie crusts for these breakfast toaster strudels?
Sure. For convenience, you’re welcome to buy a premade crust. However, a prepackaged crust will ensure this is no longer a zero waste recipe. Plus, a homemade crust tastes so much better in my honest opinion!
how do you store homemade toaster pastries?
These cinnamon toaster strudels will stay good for about 3 days in an airtight container at room temperature. I wouldn’t recommend eating them after the 3 day point!
