Zero Waste Toaster Pastries

Cardboard boxes have been hoarded for months in anticipation. Dust and crumbs have been removed from their eternal hiding places behind the fridge. With the surmounting stress of moving, I could go for some comfort food. Thankfully, my brilliant and wonderful mom is here to help. 

It's been great having her around. She's helped us pack, we've explored, and we've been cooking up lots of delicious meals in the kitchen. 

We stopped at the farmers market on the way home from the airport to pick up lots of spring/summer produce. We've made blueberry muffins, asparagus and wild mushroom orzo, kabocha squash curry, zucchini noodles, and of course our favorite comfort food brown sugar poptarts. 

Poptarts come in a ridiculous amount of packaging. But, they're so easy to make, and so much better for you! Brown sugar poptarts were my mom's favorite breakfast as a kid and quickly became mine. Justin and I have both been having some serious withdrawals. 

The new house has lots of windows. But, I hope the light coming in is great for pictures. That's what's been so nice about this kitchen. It's so nice and light; it's a happy place to cook. 

It starts out with my pie crust here. The recipe makes two 9" pie crusts. I always make one and save the other one for later. I used a leftover pie crust and it made four. If you were to use the whole recipe, it would make 8-9.

Preheat the oven to 350; 4 Pastries 2 Servings

1 Pie Crust

Filling

  • 1/4 Cup of Brown Sugar
  • 1 Tablespoon of Flour
  • 1 Tablespoon of Cinnamon

Egg Wash

  • 1 Tablespoon of Milk
  • 1 Egg

Icing

  • 6 Tablespoons of Powdered Sugar
  •  1 Tablespoon of Milk
  •  1 Tablespoon of Cinnamon

Roll out the piecrust and cut into roughly eight 5" x 7" rectangles.

Make the egg wash by whisking the egg and milk together. (If you're making four, you will have a lot of the mixture leftover. I used it for scrambled eggs. If you're making nine, double the milk but only use one egg.) Lay four of the pie crusts on a greased cookie sheet, and brush with the egg wash. 

Combine the filling ingredients in a bowl. Place a heaping tablespoon of the mixture on the bottom halves and spread it within a 1/4 inch of the edge of the dough. Take the other four crusts and place on top. You'll want to crimp it with a fork to keep the goodness inside. Poke holes on the top to let steam out. 

Bake them for 20 - 30 minutes. During that time you'll want to make the icing. 

Whisk the icing ingredients together in a bowl. Wait at least 10 minutes for the poptarts to cool and then ice.
